Sauteed Fava or Pinto Beans

This is a quick and easy main course. With a piece of whole wheat toast or some rice, you have a meal in 15 or 20 minutes.

Fava beans are a good inexpensive canned bean to have around for a quick meal.

This works well with just garlic and onion, salt and pepper. You can add other vegies and spices depending on what you have around. You could also make the seasoning more complex by adding other spices from the Mediterranean spice pattern.

Saute the garlic and ginger in the olive oil for 2-3 minutes, add the onions and spices and saute until the onions start to torn transparent. Add other vegetables and saute to desired level of doneness. Add the cooked beans and heat through. Add lemon or lime juice and garnish, stir and serve.

Variation: Stir in 2-3 cups of cooked rice and you have a good rice and vegetable dish. The rice and veggie version also works with a small can of diced tomatoes.

Variation 2: If you like it hot, add some seeded and chopped green chilis.
